It’s not only men who are fanning the flames of Tel Aviv’s hot dining scene. Recently female chefs have started taking over the city’s normally testosterone-fueled kitchens and bakeries. (There are at least three new cupcake shops owned by the ladies.) Tamar Cohen-Tzedek opened Cucina Tamar (HaTsfira 10; 011-972-3-639-0407; entrees about $17 to $26) two years ago, and it’s now one of the top Italian spots in town. ‘‘When I decided to open a restaurant, I didn’t think, Oh, I’m doing this in a man’s world,’’ she says. ‘‘I just did it.’’ So did Einav Berman, who turns out plates like tomato tarte Tatin at her new restaurant, Asif (Lilienblum 18; 011-972-3-516-5198; entrees $16 to $31). At her home kitchen in the Florentin quarter, the American transplant Rima Olvera (above) cooks up a dinner feast for 14 guests every month ($125). And at Joz ve Loz (Yehuda HaLevi 51; 011-972-3-560-6385; entrees $10 to $22), Niva Eshed heads a team of four women chefs (plus one guy) who serve Mediterranean fare like chicken liver ravioli with horseradish sour cream. Unlike in male-dominated kitchens, she says, ‘‘there is no ego. More than for the food, we cook for the experience.’’
